Ingredients:
Enough large catfish fillets to feed your crew
1 tbl plus 1 tsp salt
1 cup cornmeal
2 tbl flour
1/4 tsp pepper
2 cups peanut oil
Directions:
Heat oil in a deep skillet. Mix cornmeal, flour, 1 tsp salt, and pepper in a bowl. stir and coat the fish. Fry in skillet till done.
